Jason Atherton, one of the city’s most famous chefs, expands his culinary empire by opening Sael restaurant in London. This is a new British brasserie in the heart of St James’s Market. Launched in October 2024, Sael takes over the former Aquavit site. The place will bring a fresh, seasonal approach to British dining.
Sael represents Atherton’s return to his British culinary roots. It does so by offering a menu that celebrates the best of local produce with a modern twist. Known for blending traditional flavours with contemporary techniques, Atherton aims to create a dining experience reflecting British cuisine’s rich diversity. The brasserie will serve breakfast, lunch, and dinner. The menu evolves throughout the day to cater to different dining occasions.
The name “Sael” means “happiness” or “good fortune” in Old English. It hints at the restaurant’s ethos of creating a warm, welcoming atmosphere where guests can enjoy hearty, comforting food made from the finest ingredients.
Sael’s interior design mirrors the elegance of its St James’s Market surroundings, blending classic British style with contemporary touches. The space features plush banquettes, marble tabletops, and warm lighting, creating a sophisticated and relaxed inviting environment. The restaurant also offers a spacious bar area, perfect for pre-dinner drinks or a casual bite.
